‘Hair Teasers’ and English Pea Salad

Hair Teasers is the beauty shop that Mac and I patronize and now so does my sister-in-law, Ava.

I make a strong point of being sure to call it "Hair Teasers" because once in my column, I accidentally called it "Hair Tangles."

Shortly after that, I walked into the shop for a haircut and as I opened the door all three in unison loudly exclaimed "Hair Teaser."

They still have fun teasing me about that mistake. What can I say? Being old and forgetful is my best excuse.

If you are planning to make an appointment with Hair Teasers, the best day to go is on Friday. It is like one big party. That day, all three-hair dressers are there and each one brings some kind of prepared food, which they happily share with all the clients.

Besides being an impressive Hair Stylist, Lee Elkins enjoys cooking. The most recent Friday I was there, he brought this English Pea Salad. Normally I am not a big fan of English Pea Salad but his was different and I liked it.

As most experienced cooks, Lee doesn't always measure the ingredients. I am writing the recipe as he gave it to me. The only change I would make is to use less onion.

You will need to use your own judgment on some of the ingredient measurements.

2 cans English peas, drained

1 large Purple onion, chopped (I would use less onion)

1 (2 oz.) jar of diced pimento, drained

Grated Mozzarella cheese

Grated Cheddar cheese

2 hard boiled eggs, diced

Small amount of lime juice

Garlic, minced

Small amount caper juice

1 Tbsp. sugar

White pepper to taste

Mayonnaise, to desired consistency

Mix all ingredients, adding the mayonnaise to desired consistency.
