Trusty black skillet used on Candied Sweet Potatoes

Does everyone have a favorite cooking pot? My favorite pot is a black skillet and lid. It is eleven inches around, three inches deep and many skillet years old. I use it almost everyday.

When Hurricane "Ike" flooded our home, my skillet was underwater. My two grandsons, B.J. and Mick Rasberry, from Bridge City, rescued it. Somehow they removed all the rust, cleaned and seasoned it. Then they surprised me with its return. God Bless those boys...I just do not know how I could cook without my old black skillet.

I like that skillet so much that I have requested that when I die they bury my skillet with me. You ask "Why?" If Mac were to remarry, I do not want another woman using MY black skillet.

The other day, I cooked an old fashioned Country Cooking meal. The menu was Navy Beans & ham, Candied Sweet Potatoes, Buttered Corn on the Cob, Sliced Garden Fresh Tomatoes, Cottage Cheese with Fruit & Jell-O Salad (column 4/16/10) and Semi-Homemade Cornbread. The recipe I am sharing with you this week is the Candied Sweet Potatoes prepared in my Faithful Old Black Skillet.

Candied Sweet Potatoes

2 large sweet potatoes, peeled and sliced

1/2 half cup water

1/2 stick butter

1/2 cup brown sugar

1 tsp. lemon juice

1 tsp. vanilla extract

Nutmeg

Place the sweet potatoes in a black skillet (Sorry, if you don't have a black skillet like mine; any skillet will work). Add the water, butter, brown sugar and lemon juice. Bring to light boil and then cover. Continue cooking, stirring often until potatoes are almost done. Stir in vanilla extract and cook on low. When done, sprinkle with Nutmeg.

Nancy's Semi-homemade Cornbread

2 eggs

1/2 cup buttermilk

1 (8.5 oz.) box Jiffy Cornbread Mix

Cooking oil

Preheat oven to 400°. In a bowl, beat the eggs. Add buttermilk and Jiffy Cornbread Mix; blend ingredients. Batter will be slightly lumpy. Cover bottom of a 5 X 7 inch glass casserole dish with small amount of cooking oil. Pour batter into dish and bake 15 to 20 minutes until golden brown on top.

I think I've decided I will add my Crock Pot and Salad Shooter along with my Black Skillet. Let the next wife get her own cooking implements.
